Estate Director Nicole Hitchcock and Estate Chef Forest Kellogg are storytellers. Masters of their crafts, they weave narratives through acclaimed, small-lot wines and creative cuisine, resulting in a culinary program that brings together a passion for detail and a focus on local terroir.

As a Sonoma County native, chef Forest is well-versed in the unique diversity of Sonoma County’s agriculture and wine regions. He spent much of his childhood living and working on his family’s sustainable farm in Cazadero, where he was introduced to the concept of farm to table at an early age. Throughout his career, chef Forest has earned a reputation for creating elegant dishes that are equally delicious and beautifully unpretentious—an aesthetic he brings to every menu at J.

At the Bubble Room, chef Forest’s intrinsic knowledge of local, seasonal ingredients is showcased during a five-course pairing menu that tells the story of the relationship between the land and J’s award-winning varietal and sparkling wines. The menu changes every six to eight weeks, ensuring fresh, local flavors are always in every dish.
